Light and herbaceous, this tasty salad is perfect for hot summer days.

2 cups cooked quinoa, chilled ahead of time in fridge

4 cups watermelon, cubed

1/2 cup fresh parsley, chopped

1/4 cup  fresh mint, chopped

1/4 cup red onion, minced

1/4 cup extra virgin olive oil

2 tablespoons fresh lemon juice

1 tablespoon apple cider vinegar

1/2 teaspoon  sea salt

1/2 teaspoon black pepper

  1. Whisk extra virgin olive oil, fresh lemon juice, apple cider vinegar, sea salt, black pepper together until well-combined.
  2. In a large salad bowl, combine quinoa, watermelon, parsley, mint, red onion, then pour the vinaigrette over the salad. Toss well.
  3. Serve and enjoy!
