Strawberry, Avocado, and Asiago Spring Salad
Light, springing, and full of healthful flavor, this lovely salad will brighten any dinner, and makes a great light lunch on its own!
12oz baby spinach
16oz fresh strawberries, rinsed and chopped
6oz Asiago cheese (or your favorite!), cut into 1/4″ cubes
3 avocados, diced dipped in lemon juice
1/2 red onion, chopped (about 3/4 cup)
1/4 cup small capers
1/2 cup extra virgin olive oil
4 tbsp lemon juice
3 tbsp honey
Sea salt and freshly ground black pepper to taste
- Whisk the olive oil, lemon juice, and honey together thoroughly to make lemon honey dressing, then let sit while you prepare the rest of the salad.
- Combine remaining ingredients in a large bowl. Toss gently with dressing, and enjoy.
