Light, springing, and full of healthful flavor, this lovely salad will brighten any dinner, and makes a great light lunch on its own!

12oz baby spinach

16oz fresh strawberries, rinsed and chopped

6oz Asiago cheese (or your favorite!), cut into 1/4″ cubes

3 avocados, diced dipped in lemon juice

1/2 red onion, chopped (about 3/4 cup)

1/4 cup small capers

1/2 cup extra virgin olive oil

4 tbsp lemon juice

3 tbsp honey

Sea salt and freshly ground black pepper to taste

  1. Whisk the olive oil, lemon juice, and honey together thoroughly to make lemon honey dressing, then let sit while you prepare the rest of the salad.
  2. Combine remaining ingredients in a large bowl.  Toss gently with dressing, and enjoy.
