Yummy and fun, this festive cheese log is great for Easter family gatherings.

2 8oz packages of light cream cheese, softened

3 stalks green onion, chopped

1 tbsp light mayonnaise

1 tsp white vinegar

1 tsp Worcestershire sauce

1/2 tsp ground mustard

1/2 tsp garlic sea salt

Finely shredded cheddar cheese

Bundle of parsley, for decoration

  1. Mix cream cheese, green onion, mayonnaise, vinegar, Worcestershire, mustard, and sea salt in a large bowl, then form into a large triangle the shape of a carrot.
  2. Trim parsley to desired length, and place at the top of the cheese spread to look like a carrot’s greens.  Then, cover with cheddar cheese, and pat down so that it adheres.  If cheese spread is not holding its shape, refrigerate for around 30 minutes, or store in an airtight container for up to 2 days.
  3. Serve and enjoy!
