Our own take on a hearty, savory classic!

Corned Beef

1-2 lbs corned beef brisket

1 tsp black pepper

1 medium onion, cut into wedges

2 cloves garlic

1 head red cabbage

 

Vinaigrette

1/2 cup white vinegar

1 Tbsp. honey

1 Tbsp. prepared Dijon-style mustard

1/2 tsp of freshly ground black pepper

2 tsp sea salt

2 tsp minced garlic

1 cup vegetable oil

  1. Put the corned beef brisket in a large pot.  Add peppers, onions and garlic. Cover brisket with water and bring to a boil, then simmer for 3-5 hours.
  2. Shred red cabbage and set aside
  3. In a small bowl, whisk together the vinegar, honey, mustard, pepper, salt, garlic and oil until thoroughly combined.  Chill until ready to serve
  4. Place cooked corn beef on cracker and top with shredded uncooked cabbage
  5. Drizzle mustard vinaigrette on cabbage
