Cucumber Feta Appetizer
6 tsp extra virgin olive oil
3 oz feta cheese
1/2 tsp fresh lemon juice
Coarse sea salt and freshly cracked black pepper
1 small English cucumber, thinly sliced
- Preheat oven to 450F, and brush Croccantini with 2 teaspoons of olive oil. Bake in oven until golden, 2-3 minutes.
- In a small bowl, mash together feta, 4 teaspoons olive oil, and lemon juice with a fork. Season with sea salt and black pepper to taste.
- Spread feta mixture over Croccantini, and top with cucumber. Serve immediately.
