A fresh, tangy take on cooked shrimp that tastes especially delicious on our Toasted Sesame Mini Croccantini.

1 stalk green onion, green part only

1 tbsp soy sauce

2 tsp sesame seeds

1 tsp prepared wasabi paste (or more to taste)

1/4 tsp sesame oil

Sea salt and freshly cracked pepper to taste

1/2 lb cooked shrimp, peeled, deveined, and chopped

1/2 stalk green onion, chopped thinly

1/4 red pepper or red chili, finely minced

2 ripe avocados

1/2 lime, squeezed

 

  1. Cut green onion stalk into 3″ lengths, and place in a bowl of ice water.  Set aside for serving while you prepare the rest of the recipe.
  2. In a bowl, whisk together soy sauce, sesame seeds, wasabi paste, sesame oil, and salt and pepper.  Add cooked shrimp, chopped green onion, and red pepper, and toss to coat.  Cut avocados into slices, and place in a separate bowl.  Mash avocados with lime juice with a fork.
  3. Spread avocado on each cracker, then top with a spoonful of wasabi shrimp.  Garnish with thinly sliced green onion from ice water bowl.
