Tomato and Nectarine Salsa
1 1/2 cup ripe nectarines, chopped (about 2 medium nectarines)
2 medium tomatoes, seeded and chopped
1/2 cup cilantro
1/4 cup finely chopped onion
1 fresh jalapeno or serrano chili pepper, seeded and finely chopped
3 Tbsp. lime juice
2-3 tsp green hot sauce
1/2 tsp. kosher salt
Sliced Manchego cheese, optional
- Combine nectarines, tomatoes, cilantro, onion, lime juice, chili pepper, hot sauce, and salt in a medium bowl.
- If desired, place salsa on Croccantini and top with a slice of Manchego cheese and put in oven on broil for approx. 3 minutes, or until cheese is melted.
- Otherwise, simply serve and enjoy!
