Fresh and zesty, this yummy salad option is full of southwest flavor!

6 cups Romaine lettuce, chopped

6 cups cooked chicken, cubed

1 1/2 cups fresh corn, roasted and removed from cob

1 1/2 cups black beans, drained

2 medium tomatoes, chopped

1 avocado, diced

1/2 red onion, diced

handful fresh cilantro, chopped

1/2 cup plain Greek yogurt

3 Tbsp extra virgin olive oil

2 tsp honey

2 tsp apple cider vinegar

1 tsp garlic, minced

Juice from 1 lime

1/2 jalapeno, finely diced

2 heaping tsp taco seasoning

Sea salt and freshly cracked pepper to taste, if desired

  1. Combine romaine, chicken, corn, black beans, tomatoes, avocado, red onion, and cilantro in a large bowl.
  2. In a medium bowl, whisk together yogurt, olive oil, honey, apple cider vinegar, lime, jalapeno, and taco seasoning.  If desired, add salt and pepper after other dressing ingredients have been combined.
  3. Spoon dressing over salad, then toss well to combine.  Serve cold.
