Red Cabbage and Goat Cheese Pizzantini
Extra virgin olive oil
1/4 small head of red cabbage, cored and very thinly sliced
3/4 cup crumbled fresh goat cheese
1/4 cup heavy cream
Salt and freshly ground black pepper
2 Tbsp chopped walnuts, toasted
1 Tbsp chopped fresh chives
Sea salt and freshly cracked black pepper
- Preheat oven to broil. On a foil-wrapped baking sheet, lay out three full-size Croccantini crackers, and brush with extra virgin olive oil. Evenly spread with sliced cabbage, then sprinkle with goat cheese and drizzle the cream. Season to taste with salt and pepper.
- Bake in the oven until Croccantini turn golden brown, 4-8 minutes, making sure that they do not burn.
- Remove from heat, and top with walnuts and chives, then serve immediately.
