An excellent lunch or heavy snack, this yummy recipe combines the light sweetness of pears with the rich nutty flavor of walnuts, and the tang of blue cheese.

8oz fresh mozzarella, shredded or thinly sliced

1 – 2 ripe pears, thinly sliced

1oz walnuts, chopped

1/2 cup crumbled blue cheese

1/4 cup yellow onion, diced

1 Tbsp butter

2 Tbsp extra virgin olive oil

Arugula if desired

  1. Preheat oven to 350F.  Arrange walnuts in a single layer on a rimmed baking sheet lined with parchment paper.  Toast walnuts in oven until fragrant and slightly browned, between 5 – 10 minutes.
  2. In a medium skillet, melt butter, then add diced onions and cook, stirring occasionally, until caramelized, about 10-15 minutes.  Remove from heat and set aside.
  3. Brush your favorite flavor of full-size Croccantini® with olive oil, and cover with mozzarella cheese.  Then top with pears, toasted walnuts, blue cheese, and caramelized onions.  Transfer Pizzantinis to a rimmed baking sheet, and bake until cheese melts, about 5-10 minutes, keeping an eye on the edges of your Pizzantini to make sure it doesn’t burn!
  4. Remove from the oven and let cool for 1-2 minutes, then cut into pieces.  Top with arugula if desired, serve and enjoy!
