A light and tasty twist on deviled eggs with hot sauce and red bell peppers!

12 eggs, hardboiled and peeled
¼ cup chopped green onion
½ cup chopped celery
½ cup chopped red bell pepper
3 tbs Dijon mustard
1/3 cup mayonnaise
1 tbs sherry vinegar
3 drops of hot sauce
¼ teaspoon paprika
Salt and pepper to taste

  1. Boil all 12 eggs, peel and let cool.
  2. Chop the eggs and put them into a large bowl, including the yolk. Add the chopped green onion, celery, and red bell pepper.
  3. In a small bowl, mix together the mayonnaise, mustard, vinegar and hot sauce. Gently stir the mayo dressing into the bowl with the eggs and vegetables. Add paprika, salt and black pepper to taste.
