An unconventional pizzantini for those with discerning taste.

12-15 fresh basil leaves, chopped

8oz sharp white cheddar, grated

1/4 cup ricotta cheese

1/4 cup blueberries

2 tsp. honey

2 Tbsp. extra virgin olive oil

Salt and crushed red pepper to taste

  1. Preheat oven to 400F.
  2. Spread full-size Croccantini with olive oil, then sprinkle with white cheddar.  Then add ricotta, blueberries, and basil.
  3. Sprinkle with salt and crushed red pepper, and put pizzantini in the oven until edges are golden brown and cheese is melted, about 5-8 minutes.
  4. Remove pizzantini from oven, drizzle with honey, and serve warm.
