Sometimes, the simplest things are the best.  Tasty and easy to make, it’s the best of both worlds!

8 to 12 oz marinated goat cheese or feta, broken into large chunks

2-3 tsp extra-virgin olive oil

4-5 sprigs fresh thyme

1/2 tsp whole pink peppercorns

  1. Place cheese in an ovenproof dish and bake at 325F for 15-20 minutes, or until just beginning to turn golden brown.
  2. Remove dish from oven, and drizzle with olive oil.  Garnish with fresh thyme and peppercorns, and serve hot.
