A light, flavorful appetizer, balancing the ripe buttery flavor of Camembert with apple, aromatic thyme, and sweet honey.

2 tbsp mild honey

1 tsp fresh thyme leaves, chopped

1 crisp red apple, such as Gala or Honeycrisp

1/2 lemon

4oz ripe Camembert

 

  1. Heat the honey and thyme in a small bowl in the microwave until bubbling, about 30 seconds.  Remove and let stand to allow the honey to absorb the thyme essence.
  2. Juice lemon, then rub apple slices with lemon juice.  Spread cheese onto Croccantini, then top with apple slices.  Drizzle honey on top, and serve immediately.
